EGG DRY VARIETIES



1. EGG VARUVAL

Ingredients

Egg-3
Dry chilly-6
Roasted dal -1/4 cup
Small onion(chopped)-1/4 cup
Cumin seeds-1/2 tsp
Salt
Oil

Method

Cook the eggs, remove skin and cut to 4 pieces each.

Powder drychilly, cumin seeds and roasted dal together.

Sauté the onion till golden brown, add the powder mix all evenly.
Add salt, mix.
Add egg and mix evenly.
Sprinkle coriander leaves.





2. EGG VARUVAL (TYPE-2)

Ingredients

Egg-4
Chopped onion-1/2 cup
Chopped tomato-1/4 cup
Green chilly-3
My Masala powder -1 tbsp
Salt
Oil
Coriander leaves, curry leaves

Method

Cook the eggs and cut to 4 equal parts.

In oil season mustard seeds, urad dal and curry leaves.
Add onion and green chilly, sauté it.
Add tomato and sauté it.
Add masala powder, salt and mix evenly.
Add eggs and mix without breakage.
Sprinkle coriander leaves.




3. SCRAMBLED EGG

Ingredients
Egg-4
Green chilly-2
Chopped onion-1/2 cup
Salt
Mustard seeds, urad dal, curry leaves
Coriander leaves
Oil

Method
Season Mustard seeds, urad dal, curry leaves with oil.
Add onions and chopped chillies.
Sauté well.
Add the beatened eggs with salt and pepper powder(option).
Mix well till dry.
Sprinkle coriander leaves.

Option: can add grated carrot and sauté with onion.
Can add cooked sprouts finally and mix all once .


4. OMLETTE

Ingredients
Egg-4
Green chilly-2
Chilly powder-1/2 tsp
Chopped onion-1/2 cup
Salt
Curry leaves
Coriander leaves
Water or milk-2 tsp

Method

Mix all the ingredients together .
Adding water or milk gives fluffyness and chilly powder will evenly mix with egg.

Heat the tawa, pour a ladle of egg mixture.
Spread along the sides.
Apply oil and cook on both sides.


5. VEGETABLE OMLETTE

Ingredients
Egg-4
Green chilly-2
Chilly powder-1/2 tsp
Chopped onion-1/2 cup
Chopped tomato-1/4 cup
Grated carrot-2 tbsp
Salt
Curry leaves
Coriander leaves
Water
Basen flour-1 tbsp

Method
Sauté onion,carrot,chillies with oil.
Add tomato and sauté 1 mt.
Mix all the ingredients together to batter .


Heat the tawa, pour a ladle of egg mixture.
Spread along the sides.
Apply oil and cook on both sides.


6. PEPPER EGG

Ingredients
Boiled egg-4

To paste:
Pepper-2 tsp
Ginger-1/2 inch
Garlic-4 flakes
Small onion-5
Cinnamon and cloves-1
Turmeric powder-1/2 tsp

salt
oil

method
grind the mentioned ingredients to a fine paste.

Heat 1 tbsp of oil,add the paste and salt.
Sauté till raw smell goes.
Sprinkle water and make a boil.

Slit the boiled egg to half.
Add in the masala and mix evenly in low flame (egg should not be broken).
Keep in sim till masala coats in egg and gets like dry masala egg.

Garnish with curry leaves and coriander leaves.


7. TAWA EGG

Ingredients
Boiled egg-5

To paste
Dry chilly-2
Ginger-1/2 inch
Garlic-4 flakes
Pepper-1/2 tsp

Salt
Turmeric powder
Cornflour-1 tsp

Oil

Method

Paste the mentioned ingredients.
Add salt, turmeric powder and cornflour with the paste and mix evenly.

Cut the egg vertically to half.
Marinate egg with the masala for sometime.

Heat the tawa.
Apply oil on tawa and arrange the eggs on it.
Again spread oil on eggs.
Roast on both sides.

Option:
This roasted egg can be added in briyani instead of adding plain egg.



8. VEGETABLES EGG BONDA

Ingredients
Boiled egg-5
Bajji flour-1 cup
Cooked vegetables-1/2 cup
Chat masala powder-1 tsp
Salt
Oil

Method
Make the batter with bajji flour.

Mix the vegetables with salt and chat masala.

Cut the egg to half horizontally.
Remove yellow egg.
Now it looks like cup.
Fill the egg with vegetables.

Powder the yellow egg.
Sprinkle on filled vegetables and cover.

Heat the oil.
Dip the veg egg in bajji batter and fry in oil.

Option:instead of vegetables, chicken masal , mushroom or any item can be stuffed.



9. STUFFED EGG

Ingredients

Egg-4
Maida-1/2 cup
Water-3/4 cup
Salt

To stuff:
Any vegetables or mutton minced-1/2 cup
Chopped onion and tomato-1/4 cup
Chilly powder-1/2 tsp
Garam masala powder-1/2 tsp
Salt
Oil
Coriander leaves

Method

Sauté chopped onion and tomato with oil.
Add veg or non veg, chilly powder,turmeric powder, garam masala powder and salt.
Mix well.
Add water and cook till dry.
Sprinkle coriander leaves.

Boil water,add salt and maida.
Mix till thick paste consistency.
Allow it to cool lightly.

Make a small hole on top of the egg.
Remove some egg and add the stuff in it.
Close the hole with maida paste.
Cover ¼ portion of egg with paste.

Cook the egg in boiling water for 10 mts.

When it is done, remove shells and slit the egg and serve with sauce.




10. EGG GREENS ROTI

Ingredients

Wheat flour-2 cup
Egg -1
Drumstick leaves-1/2 bundle
Onion-1
Garam masala powder
Salt
Turmeric powder
Oil

Method

Heat oil; add chopped onions and sauté well.
Add chopped leaves and sauté it.
Add garam masala powder, turmeric powder and mix once.
Add beatened egg, salt and scramble it.
Mix all evenly.

Make the soft dough with wheat flour, salt and water.
Do balls.

Make the balls to cup shape, keep some stuff-in and roll it to chapattis.
Cook in tawa both sides applying oil or ghee.




11. SPICY EGG

Ingredients

Egg-4
Chopped onion-1/2 cup
Green chilly-2
Salt

To paste
Dry chilly-2
Ginger-few
Garlic-5 flakes

Method
Heat little oil in kadhai.
Add onion and green chilly.
Sauté well.
Add grinded paste, salt and sauté till raw smell goes.

Cut and pour the eggs in kadhai.
Mix evenly and scramble it.
Sprinkle coriander leaves.

Serve with roti,dosa or stuffin for dosa.

EGG WITH VEG







1.CAULIFLOWER PEAS EGG KAIMA

Ingredients
1 cauliflower
1 cup peas
4 eggs(option for vegeterians)

To paste:
2 bigonions
1 tomato(big)
1 inch ginger
6 flakes of garlic
5-7 red chillies
Few cinnamon,cloves,aniseeds

Method
Clean the cauliflower well.finely chop the cauliflower to look like kaima.
Paste all the ingredients(mentioned) to a nice paste with little salt.

Place a pan in stove, pour 2tbsp of oil. Put the paste and saute well till the raw smell goes. Now add peas, add chopped cauliflower, turmeric powder, needed salt,mix 2 mts.
Add little water and cover the lid. cook it ,allow the water to dry .
Beat the eggs lightly with salt and pepper powder(option ).
Pour this mix in cooked Cauliflower and keep on frying till it is well scrambled.
Sprinkle chopped coriander leaves, mix.
It looks like kaima which is suitable with plain rice,roti,bread and even as dosa stuff-in(masal dosa).







2.RIDGE GOURD EGG RECEIPE

Ingredients
Chopped ridge gourd-1 cup
Egg-1
Chopped onion-1/4 cup
Chopped green chilly-2
Turmeric powder-1/4 tsp
Sambar powder-1 tsp
Salt
Oil-1 tbsp
Mustard seeds, urad dal, chana dal
Curry leaves and coriander leaves

Method
Season Mustard seeds, urad dal, chana dal in oil.
Add onion and green chilly.
Sauté for 2 mts.
Add r.gourd, turmeric powder and sambar powder.
Mix all evenly.
Add little water and salt.
Close the lid and cook.
When the veg is cooked and water dries , add raw egg and mix well till it
Scrambles.
Sprinkle chopped Curry leaves and coriander leaves.



3.OMLETTE VEGETABLE CURRY

Ingredients

For omlette
Egg-4
Small onion chopped-1/4 cup
Green chilly chopped-2
Salt

For curry

Mixed vegetables (cooked)-1/2 cup
Onion paste-1 cup
Tomato puree-3/4 cup
Ginger garlic paste-1 tsp
Jeera-1/4 tsp
Turmeric powder
Chilly powder-1 tsp
Garam masala powder-1/2 tsp
Salt


Method
Beat egg; add onion, salt, and green chilly.
Do small size (mini) omelettes.

In oil season jeera, add onion paste and sauté well.
Add ginger garlic paste and sauté till raw smell goes.
Add tomato puree and sauté well till oil comes out.
Add turmeric powder, chilly powder, garam masala powder, salt, little sugar and mix well.
Add cooked vegetables, little water and boil well.
Add omelettes and mix all evenly till little thick consistency.

EGG CURRIES





EGG KURUMA

Ingredients

Onion-1 cup
Ginger-1/2 inch
Garlic-5 flakes
Dry chilly-2
My Masala powder-1 tbsp
Coconut scrapped-1/2 cup
Roasted dal -1 tbsp
Curry leaves, coriander leaves
Sliced onion-1/2 cup
Sliced tomato-1/4 cup
Green chilly-1
Egg-3
Oil
Salt

Method

Sauté onion, ginger, garlic, dry chillies till golden brown.
Add masala powder, coconut .off stove.
Add roasted dal, mix all and grind to paste.

In oil season mustard seeds, urad dal, curry leaves.
Add onion, green chilly, sauté it.
Add tomato, sauté it.
Add grinded paste, salt and boil with required water.

Now cut and add the eggs directly in the gravey and close the lid. (Don’t stir it)
Leave for 4 mts.
Then mix evenly (cut the egg as pieces inside-option)
Sprinkle coriander leaves.

Serve with chapattis, dosa.



MEAL MAKER EGG KURUMA


Ingredients
Meal maker-20 pieces
Garam masala-2 tbsp
Green chilly -6
Ginger-1/2 inch
Garlic-4 flakes
Mint leaves-little
Onion chopped-1 cup
Tomato chopped-1/2 cup
Coconut scrapped-1/4 cup
Egg-3
Potato-2
Salt
Oil

Method
Soak mealmaker in hot water for 15 mts.
Cook the potato and cut to pieces.
Beat the egg and keep aside.

Grind coconut, ginger, garlic, masala powder to paste.

Splutter mustard seeds in oil; add mint leaves, onion and green chillies and sautés well.
Add tomato, sauté well.
Add coconut paste and mix till raw smell goes.
Add water, salt and boil it.
Add mealmaker (squeezed), potato and egg.
Boil well till gravey level.
Sprinkle coriander leaves.

Serve with tiffin items.






EGG CURRY(KULAMBO)

Ingredients
Small onion-1 cup
Few ginger, garlic pieces
Garam masala powder-1 tbsp (recipe given in POWDER section)
Coconut grated-1/4 cup
Egg-5
Big onion -1 sliced
Tomato-1 sliced
Greenchilly-1 or 2
Oil
Salt
Mustard seeds, uraddal, curry leaves



Method:
Cook the eggs and remove the shells.
Lightly slit the eggs in up and down portion.

In oil sauté small onion, ginger, garlic to golden brown.
Add garammasala powder, coconut and saute.
Grind to paste; add water, mix and keep.

In oil season mustard seeds, uraddal, curryleaves, add greenchillies, sliced onion, tomato and saute well.
Add the above paste, salt, water (needed).
Allow it to boil.
Add eggs and boil.

Leave till gravey consistency.
Sprinkle coriander leaves.

Serve with idly, dosa, rice, chapatti and poori.







EGG RECEIPES





EGG FRIED RICE

Ingredients
Basmathi rice-1 cup
Tiny chopped vegetables-1/4 cup
(Carrot, beans)
Egg-4
Green chilly-2(option)
Oil
Salt
Pepper powder-1/2 tsp
Coriander leaves or spring onion

Method
Cook the rice with required salt and oil.

Sauté the vegetables with oil.
Add little agenomotto or salt and sauté till ¾ th cooked.

Scramble the egg with little salt and pepper powder.

Add rice, pepper powder and mix all evenly.
Add egg.
Sprinkle coriander leaves.

Serve with sauce or Manchurians.



EGG BRIYANI


Ingredients
Briyani rice-1 cup
Boiled eggs-5
Oil and ghee
Salt
Sliced onion-1/2 cup
Sliced tomato-1/4 cup
Green chilly-2
Mint leaves(1/4 cup)
bay leaves and cardamom,cinnamon and cloves-few

To paste
Ginger-1/2 inch
Garlic-6 flakes
Cinnamon,cloves,aniseeds and poppy seeds-few
Dry chilly-2

Method
Heat ghee and oil,season bay leaves and cardamom,cinnamon and cloves.
Add mint leaves,mix for 2 mts.
Add onion,chilly and tomato.
Mix for 2 mts.
Add masala paste and mix till raw smell goes.
Add rice,mix evenly.
Add water and salt.
Cook it.
Sprinkle coriander leaves.
Remove from fire.

Lightly slit the eggs on top and bottom.
Add in briyani,mix evenly and close and keep for 10 mts.



HEALTHY EGG PEAS PULAV

Ingredients

Egg-4
Basmathi rice-1 cup
Onion sliced-1/4 cup
Green chilly-4
Fresh peas-1/2 cup

To grind:
Coconut -1 cup (scrapped)

To paste:
Badam-2
Cachewnut-4
Kuskus-1 tsp
Nutmeg-little
Acrot-2
Ginger-1/2 inch
Garlic-5 cloves

For tempering:
Ghee-required
Oil
Cinnamon-little
Cloves-4
Cardamom-1
Bay leaves

Salt

Method
Soak the rice and drain.
Take milk from coconut.
Boil and cut the eggs vertically.

Heat oil and ghee; add cinnamon, cloves, cardamom and bay leaves.
Add chopped onion, green chilly mix once.
Add paste and sauté lightly.
Add peas and sauté it.
Add coconut milk and water (for 1 cup rice, add 2 cups of milk and water mix)
Add salt, rice. sprinkle coriander leaves.
Cook it.
After the rice is cooked, add the egg pieces and mix evenly (carefully)
Keep in simmer for 2 mts and serve with raita.



EGG IDI APPAM


Ingredients
Cooked and make pieces –idi appam-1 cup
Sliced small onion-1/4 cup
Egg-2
Green chilly-2
Dry chilly-2
Salt-a pinch
Oil
Mustard seeds, urad dal, chana dal, curry leaves
Coriander leaves


Method
Already idi appam is made with required salt.

Beat the egg with little salt and pepper powder.

Season Mustard seeds, urad dal, chana dal, curry leaves with oil.
Add onions and chillies, sauté well.
Add broken idi appam, coriander leaves.
Pour egg on it.
Mix altogether in medium flame till it gets dry.

Serve with chenna masala, coconut chutney.
